8 Baking & Pastry students. This group will be combined with 18 Culinary students for all events outside of the labs.

Italy offers a world of delights to those seeking baking and pastry secrets and culinary creations. The ingredients, creations, and styles of Italian baking and pastry arts are the focus of this program.  Starting in Rome for a cultural introduction to Italy, you will a acquire a deep awareness of both cultural unity and regional diversity.  This first week provides you with an in-depth introduction to Italian culture and the role of cultural heritage in customs and lifestyles.  Lectures will provide an organized, focused and academic understanding of Italian history, art, architecture, food, religion and culture.  This first week provides additional enrichment through basic notions of Italian language terminology along with assigned pre-departure readings and a final paper.

For the remainder of the program based in Florence, the history and warmth of Italy will wrap around you as you participate in quality hands-on labs and area excursions. You will participate in traditional lectures and classroom presentations at the state-of-the-art campuses of Florence University of the Arts by experts in the area. You will learn to identify and use typical Italian vegetables, fruits, herbs, nuts, grains, dry goods, dairy products and spices in various forms.  You will explore both fresh and prepared foods and different Italian wines.  Discussions will include how to receive, store and hold products, as well as evaluate them for taste, texture, smell, appearance and other quality attributes.

A hands-on apprenticeship component is included at the Apicius school pastry shop and creative learning lab called Fedora.  It is located across the street from the main culinary campus and is operated by the baking and pastry students and faculty of Florence University of the Arts.   It represents a high-end boutique version of the pasty arts, and its product lines range from breakfast pastries, savory items, and daily dessert production as well as customized dessert odors and seasonal products for Italian festivities that are popular with both international and Italian clients.  You will be exposed to the real life scenarios of running a pastry business, including menu planning, food purchasing, pastry production and management.  Apicius International School of Hospitality is sure to welcome you to their home and share their passion for the culinary arts. Use this opportunity to feel the depths of history as you walk around central Italy in an area known as the birthplace of the Italian Renaissance.  

Optional Additional Fall Program: TuttoToscana
During Fall, FUA has a wonderful program, the TuttoToscana Program, that runs Fall Session II (in Florence) and Intersession III (in NY). During your courses in Italy over the summer, you may hear about this special FUA opportunity.  TuttoToscana is a specialized Fall program that combines academic learning, event management, and event production at real events. The program name means “all things Tuscan,” and aims to interpret, with the help of its international student/faculty team, unique themes pertaining to Tuscan culture in prestigious locations. Students begin event management and preparation through three weeks of academic coursework in Florence, which concludes with a week-long production and staging of an event cycle in an exciting location – the James Beard Foundation and a rotating line-up of other important locations in the local community.

Baking and Pastry Italy 2Total Credit Hours Earned Abroad On This Program:
13.5 quarter credits

The specific courses on this program are listed in the "Courses Offered" link above. Since host courses are not from the JWU catalog, you will schedule at JWU for a generic "ABRD4180" placeholder course that is holding the space for the host courses completed abroad. You will only be able to schedule for the placeholder course if you shared your final academic plan with SAS and official summary notes have been written in your JWU degree audit.

Upon completion of the program, the host will send an official transcript to JWU Study Abroad.  The successfully passed courses will be applied to the JWU transcript as transfer credit.  The typical timeline for your JWU transcript to be updated is 3-5 months.

Student Status: 
Must demonstrate you are a current Johnson & Wales University student or a matriculating student at another academic institution. Must demonstrate you are on a baking and pastry academic and career path.

JWU Student Prerequisite Courses:
Completion of all sophomore Baking & Pastry Arts labs by the program start date. [Note: Garnish Your Degree students may participate in this program after completing all of their labs on campus.]

Non-JWU Student Prerequisite Courses:
Proof of specific baking and pastry-related skills must be presented through your application materials.

JWU Study Abroad and FUA staff coordinate pre-departure information. JWU staff does not travel with the students and program supervision is provided on site by Florence University of the Arts faculty and staff. All academic content is delivered by FUA to provide an immersive international education environment.
JWU Study Abroad will schedule pre-departure meetings to discuss the program with the selected group.  In addition, FUA will distribute study guides and reading assignments prior to the US departure.  FUA faculty teaching the Cultural Introduction to Italy course will also schedule a Skype meeting with each student.

Learning on study abroad programs occurs both inside and outside of the classroom. During the program, students should expect to be in program-related activities 30-40 hours per week. Activities include intensive hands-on lab experience, classroom applied theories, and industry visits. Students are required to participate in the full program itinerary and group activities.

Tourist hotels with double/triple occupancy rooms and air conditioning.

While in Florence
FUA does offer university accommodations. JWU has chosen shared apartment housing for participants. Students are housed in various apartments spread throughout the historic center of Florence, within a 15-20 walk to FUA facilities. 

The apartments are fully furnished and fully functional. Utilities are included in the housing cost. The standard layout of the apartments consists of multiple bedrooms, multiple bathrooms (variable), kitchen, living/dining room space. The bedrooms range from single bedrooms for one occupant (limited availability) to triple bedrooms, with the occasional quad space. Multiple bedrooms share a common living space.  Although apartments are of the same standard and have similar facilities, no two apartments are alike.  It is important to note that, like many parts of Europe, not all apartments have air conditioning.

Any upgrade in housing will be covered at your personal expense and will need to be paid directly to FUA.

Rome Week
1-2 meals are provided daily.

While in Florence
The apartments include basic kitchen equipment and are near local grocery stores.  Plan to make the majority of your meals at home.

In addition, a Florence University of the Arts meal card loaded with 80 units (covers approximately 27 main courses + appetizers) is provided for use at the university run restaurants, Ganzo and Fedora.

Flight parameters are set by Study Abroad to accommodate group logistics. Do not purchase any flight until the specific parameters are communicated to you, usually 4 months prior to departure.

You must be in good standing with your campus's office of Student Conduct or Student Affairs for the dates of the program.

Each program has a mandatory orientation process which starts the term before your program starts. Failure to participate in the various meetings listed below may jeopardize your ability to participate in the program.

Pre-departure meetings vary according to the program model and typically include discussions, on-line resources, and assignments to ensure you understand your specific program, the courses, housing, costs and other related details. These meetings may be a combination of in-person and web-based meeting formats.

An in-person Study Abroad Retreat is scheduled on each campus with advertised dates, times, and locations to discuss topics relevant to all study abroad programs. 

An in-country Orientation is included upon arrival to your program for on-site information and program reminders.
